German –born Head Chef Marcus Berndt has a true passion for New Zealand and the produce grown here.
After working in Germany and Switzerland he found himself visiting New Zealand but not wanting to leave. Marcus has worked in some of the best Restaurants in Auckland and Gisborne and all the while he has gaining knowledge from our top chefs about the unique produce, meat and seafood produced in New Zealand.
Recently settling in the beautiful Bay of Islands, Marcus has already had great success heading the team at Provenir. ‘’Our emphasis is on top quality ingredients which are prepared well,” says Marcus.
With its fertile soils and temperate climate Northland is one of the country’s primary food producing regions. “We are lucky to be able to source the best Northland has to offer. Our farmer to table philosophy is what Provenir is all about and we aim to treat the ingredients with the utmost respect,” adds Marcus
Marcus uses a mixture of contemporary and classical techniques to make the ingredients shine. Provenir’s cellar offers premium wines from New Zealand and around the world as well as handpicked craft beers.
The Dining room offers uninterrupted picturesque views of the Bay Of Islands with an alfresco dining experience beside the pool.
From the spray free produce at honeysuckle farm in Kerikeri to the freshest of Oysters that arrive daily from the farm in Orongo Bay just a short ferry ride away it is the ultimate local dining experience.
“Sourcing produce in the region is an honour, we are so lucky to have such a diverse selection of growers locally that all have such passion for the region and their products,” says Marcus
When not in the kitchen Marcus is tending to the kitchen’s garden where he grows the micro herbs used on his dishes or he’s visiting the local growers and the farmer’s markets around Northland.
“What we put on the plate has just been harvested only a few kilometres away,” adds Marcus.
