Paihia Beach Resort and Spa's Provenir Restaurant launches exciting spring menu
The expert team at Provenir Restaurant have been busy experimenting and improving the dishes that you will soon taste as part of their delicious spring menu at the award -winning Paihia Beach Resort and Spa.
"From pickling wakami and samphire to infusing gin with jasmine each technique will play an integral part in how a dish comes together," says head Chef Marcus Berndt.
Like a great work of art, each piece of the spring menu is carefully considered to come together to form a fine-dining masterpiece. "Our team have spent the last few weeks quietly refining the finer details of each component so that come launch day we are truly satisfied and proud to serve each dish to the customer," says Marcus.
The new menu is a result of a group effort driven by people who are passionate about food. "Designing new menus are always an exciting time for us. Each and every member learns something new and adds to their compendium of culinary knowledge and that's ultimately what cooking is all about. Sharing ideas and perfecting them as a team," adds Marcus.
Unlike a lot of head chefs, Marcus's working day doesn't start when he dons his chef's apron and steps into the kitchen. Marcus spends his morning foraging some of the ingredients you see on each scrumptious dish.
"Sorrel handpicked from his property to nasturtium from the coastal Bay Of Islands. The flavour profile from plants we take for granted can bring something special to a dish. Marcus likes to play with under-utilsied products such as sweetbreads that will be on his lamb dish," says Provenir's restaurant manager Kathleen Thomas.
Kathleen has been working closely with Marcus and his chefs to discover the perfect wine matches that will flawlessly balance each dish on the menu to bring to you the ultimate Provenir experience.
Provenir Cuisine and Cellars new menu will feature a fresh new layout. As well as their popular ala carte menu, Provenir customers will also have the choice of a chef's selection degustation.
"This new menu will allow diners to experience smaller portions of more dishes in the same sitting with each dish created with all the senses in mind while still showcasing the individual products. The chef's tasting menu will showcase six of the best dishes from the spring menu along with the usual complementary courses that our customers currently get," adds Kathleen.
Provenir’s new spring menu will be available at the restaurant from mid-September.
